VirtualBox
VirtualBox is my favourite solution to run Windows software on my Macs and Linux machines. I recommend using the seamless display mode, with the Windows task bar configured to show vertically along the left screen border, while the Mac's Dock remains at the bottom. Of course you can also do it the other way around.

MacSpeech Dictate
The ultimate speech recognition software for the Mac uses the Nuance's engine, so you can get very good results after only a few minutes of training. I use it to input text at about three to four times the speed of typing on the keyboard.

OpenOffice.org
Open office org is the best office software for the Mac. It uses the ISO certified OpenDocument format. It is free and open source software.

Cyberduck file transfer software
This is my favourite file transfer program on the Mac. It supports the FTP, SFTP, FTPS and WebDAV protocols. It is free and open source software, but please donate to the developer to support future improvements.

VoIP soft phones
Counterpath makes excellent VoIP phone software. I use EyeBeam on the Mac, and Bria on my iOS devices.

Miro video converter
This is an excellent free, one-step video converter. Its simple interface makes it very easy for novice users to convert a wide range of video formats (including Flash videos as downloaded from YouTube, etc) to iPhone, iPod and other device specific and standard web video formats.
